- Carefully used, "Albumen" (with an 'e') refers to the egg white of almost any animal, which consists of water(60-95%) and any of a class of several dozen proteins called 'Albumin", predominantly Ovalbumin.
- Archaic and some technical use of "Albumen" can refer to the non-germ bulk of certain grains which serve the same structural and metabolic purposes.
- Albumin (with an 'i') refers to a major class of several hundred proteins (almost all non-globulins) which also predominate in animal connective tissues, especially blood.
